Elements:

  • 6 bone-in, skin-on rooster thighs
  • Kosher salt and freshly floor black pepper, to style
  • 2 tablespoons unsalted butter
  • 3 giant shallots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1/2 cup dry white wine
  • 1 1/2 cups rooster inventory
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 2 sprigs contemporary thyme
  • 2 sprigs contemporary rosemary
  • 1 pound child crimson potatoes, halved
  • 1/2 bunch kale, stems eliminated and leaves torn into bite-sized items

Instructions:

  1. Preheat oven to 325 levels F.
  2. Season rooster thighs with 1 teaspoon salt and 1/2 teaspoon pepper.
  3. Soften butter in a big skillet over medium warmth. Working in batches, add rooster, skin-side down, and sear either side till golden brown, about 2-3 minutes per facet; put aside.
  4. Add shallots and celery, and cook dinner, stirring often, till tender, about 5-7 minutes; season with salt and pepper, to style. Stir in garlic till aromatic, about 1 minute.

  8. Stir in kale till wilted, about 2 minutes; season with salt and pepper, to style.
  9. Serve instantly.
